Crispy Lemon Cookies

Here is one of the latest recipes I've been cooking up. My neighbor Neil willingly shares the bounty of his lemon tree. I love lemons. They are beautiful, tangy, and cheerful looking. It's like a little ray of sunshine encompassed in a piece of fruit.
Here's the recipe:

Crispy Lemon Cookies
1 c. butter, softened
2 c. white sugar
2 eggs
2 Tbs. lemon zest
1 Tbs. fresh lemon juice
2 tsp. vanilla extract
1 tsp. baking powder
1/2 tsp. baking soda
2 1/2 c. all-purpose flour
1/2 c. sugar for rolling the balls in.

Preheat oven to 350 degrees.
Beat butter and sugar in a large bowl on high speed until fluffy. Beat in remaining ingredients except flour until well blended.
On low speed, beat in flour just until blended.
Form into small balls and roll into the 1/2 c. reserved sugar. Place cookies 2 inches apart on ungreased cookie sheets.
Bake 10 to 12 minutes until edges are just lightly browned.

question, what is the role of baking soda in baking cookies.

Baking soda and baking powder are used to make baked goods fluffy or in this case probably less dense.
